Pudding (Brown) (Mrs. Burrel's Recipe.)

Instructions

  1. Take two eggs and weigh them. Take their weight in flour and in butter, and the weight of one in sugar.
  2. Beat the butter to a cream with the sugar, then add the eggs well beaten and stir in the flour.
  3. Stir in two tablespoonfuls of jam or fruit jelly. Golden syrup may be substituted for the jam.
  4. Before putting the pudding in a mould, stir in half a teaspoonful of carbonate of soda.
  5. Boil or steam for an hour and three-quarters, allowing plenty of room for the pudding to rise in the mould.
  6. Serve with wine or sweet sauce.
