Croquettes of Fish

Ingredients
- cold boiled fish
- salt
- cayenne
- 1 ounce butter
- 2 ounces flour
- 1 gill milk
- 1 pound cold fish
- 1 teaspoonful Anchovy or Worcestershire sauce
- egg
- bread-crumbs
- hot fat
- fried parsley
Instructions
- Take any cold boiled fish and pound it well.
- Season the pounded fish with salt and cayenne.
- Put one ounce of butter in a stew-pan and add two ounces flour.
- Pour in one gill of milk and stir over the fire until the mixture thickens, boils, and becomes smooth.
- Add one pound of the cold fish and one teaspoonful of Anchovy or Worcestershire sauce to the pan.
- Stir all together well.
- Turn the entire mixture into a plate to cool completely.
- Once cooled, shape the mixture into croquettes.
- Dip each shape into beaten egg and roll in bread-crumbs to coat thoroughly.
- Fry the croquettes in hot fat until golden.
- Serve hot with fried parsley.
