Junket (Mrs. Hiddingh's Recipe)

Ingredients

Instructions

  1. Take new milk and sweeten it with one ounce of sugar.
  2. Heat the sweetened milk to blood heat.
  3. Flavour the milk with a tablespoonful of Vanderhum or rum.
  4. Add one tablespoonful of rennet and stir well.
  5. Pour the mixture into a glass dish.
  6. Set the glass dish in a tin of warm water so the mixture remains lukewarm for half an hour, during which time it will become quite firm.
  7. Whisk up half a pint of cream with sugar.
  8. Pour the whisked cream over the junket before serving.
