Junket (Mrs. Hiddingh's Recipe)

Ingredients
- 1 quart Milk
- 1 oz White Sugar
- 1 tablespoonful Rennet
- 1 tablespoonful Vanderhum
- 0.5 pint Cream
- Sugar
Instructions
- Take new milk and sweeten it with one ounce of sugar.
- Heat the sweetened milk to blood heat.
- Flavour the milk with a tablespoonful of Vanderhum or rum.
- Add one tablespoonful of rennet and stir well.
- Pour the mixture into a glass dish.
- Set the glass dish in a tin of warm water so the mixture remains lukewarm for half an hour, during which time it will become quite firm.
- Whisk up half a pint of cream with sugar.
- Pour the whisked cream over the junket before serving.
