Maṣūṣ (Saffron-Vinegar Braised Kid with Celery)

Ingredients
- suckling kid
- sesame oil
- celery leaves
- good vinegar
- saffron
- mastic
Instructions
- Scald a suckling kid, cut it on its joints, and half-boil it in water.
- Pour fresh sesame oil (shīraj) into the pot and drop in chopped celery leaves; when they wilt, add the kid.
- Pour over enough good vinegar to cover, and tint with saffron.
- Leave on the fire until it settles and is fully cooked.
- Add a little mastic (muṣṭakā), then serve.
