Byeolmi (Special Delicacy — Cod-and-Hen Aspic)

Instructions

  1. Remove heads and bones from two hens and three whole dried cod, combine, and simmer in plain water.
  2. Add 1 doe clear soy sauce, 1 doe sesame oil, ginger, black pepper, and Sichuan pepper; season lightly and boil down.
  3. Simmer until the bones dissolve and everything softens and thickens like jelly; add more water as it boils away and discard settled bones.
  4. Pour into a brass vessel; when it congeals, slice thin like boiled meat and eat with vinegar-soy.
