Ruṭab fī Ghayr Awānihi (Mock Fresh Dates Out of Season)

Ingredients

Instructions

  1. Take large dried dates (qasb) whose depths are still intact.
  2. Cut a hand's-width opening in the top of a green watermelon (biṭṭīkha) and remove its pulp without the water.
  3. Place the dried dates inside, replace the top, and leave a day and a night.
  4. Remove the dates, now moist like freshly picked ruṭab.
