Jūdhāba of Dates (Jūdhābat al-Tamr)

Ingredients
- raṭl dates
- raṭl water
- raṭl sugar
- raṭl honey
- dirham saffron
- raṭl bread crumb
- raṭl walnuts
- almonds
Instructions
- Cook four raṭls of dates (with ten raṭls of water, per the editorial variant) until soft; mash by hand and strain.
- Return to the pot and add sugar, honey, saffron, a raṭl of crumbled bread crumb, and a raṭl of peeled walnuts.
- Stir until nearly cooked; pack between two dough sheets. Optionally garnish with almonds (then called 'date ʿaṣīda'); it may also be made without sugar or honey.
