Jūdhāba of Dates (Jūdhābat al-Tamr)

Ingredients

Instructions

  1. Cook four raṭls of dates (with ten raṭls of water, per the editorial variant) until soft; mash by hand and strain.
  2. Return to the pot and add sugar, honey, saffron, a raṭl of crumbled bread crumb, and a raṭl of peeled walnuts.
  3. Stir until nearly cooked; pack between two dough sheets. Optionally garnish with almonds (then called 'date ʿaṣīda'); it may also be made without sugar or honey.
