Pudding (Plum)

Instructions

  1. Stone and clean 1 lb. of raisins, and wipe 1 lb. of currants.
  2. Cut 1 lb. of beef suet very fine, and the candied citron also.
  3. Whisk the whites and yolks of 7 eggs separately.
  4. Mix all together with 2 oz. of flour, the sugar, the mixed spices — ginger, cinnamon, nutmeg — and the brandy.
  5. Boil in a well-floured cloth, or in a mould, for six hours.
  6. It improves by being made weeks before, and kept till wanted. Very good.
