Samoju (Three-Horse-Day Wine)

Ingredients
- doe fine wheat flour
- doe good nuruk
- dong-i (large jar) cold water
- mal white rice (second Horse day)
- mal white rice (third Horse day)
- mal white rice (fourth Horse day)
Instructions
- First Horse (O) day of the first month: set an official crock somewhere neither hot nor cold; mix 7 doe each of fine wheat flour and good nuruk into 4 large jars (dong-i) of cold water and pack into the crock.
- Second Horse day: wash 5 mal white rice, soak overnight, steam whole without letting the heat escape, add to the crock and seal tightly.
- Third Horse day: wash 5 mal white rice, steam whole without losing its heat, and add.
- Fourth Horse day: wash 5 mal white rice, add to the crock, and use the wine at Dano (5th day of the 5th month).
