Pudding (Madonna) (Mrs. D. Cloete's Recipe.)

Instructions

  1. Chop 8 oz. of beef suet very fine and mix it with the bread-crumbs, 8 oz. of sugar (white or brown), and the grated lemon-peel.
  2. Then add the juice, a tablespoonful of brandy, and the egg well beaten.
  3. Mix well together with a wooden spoon and pack firmly into a well-buttered mould.
  4. Boil one and a half hours.
  5. Serve with sweet or wine sauce.
