Fritters (Potato) (Bessie's Recipe.)

Instructions

  1. Mix well together large mealy potatoes, boiled and mashed, 2 eggs, 1 tablespoonful of fine flour, 1 tablespoonful of butter or cream, a little salt, and cinnamon.
  2. Make the mixture into little flat cakes and fry in boiling lard or clarified dripping.
  3. Serve with sugar and cinnamon.
  4. The same receipt does for sweet potatoes: half a pound of them, boiled and mashed, and two spoonfuls of cream instead of one.
  5. If eggs are scarce, use half a teaspoonful of carbonate of soda instead of the two eggs.
