Piggie, or Sucking-Pig

Instructions

  1. Clean and wash the piggie well.
  2. Make a stuffing of bread-crumbs, suet, dried sage leaves, pepper, salt, and lemon-peel.
  3. If eggs are plentiful, moisten the stuffing with an egg and some water.
  4. Stuff the pig with the mixture.
  5. Sew up the pig with strong thread.
  6. Truss the pig as a hare is trussed, with its fore-legs skewered back and its hind-legs forward.
  7. Lay the pig on a trivet in a dripping-pan.
  8. Pour a pint of water into the pan.
  9. Rub the piggie all over with butter or sheep-tail fat.
  10. Set it in a hot oven and roast for two hours.
