Ingredients

Instructions

  1. Slice old winter melon thick and blanch briefly.
  2. Heat soy sauce with oil; drain the melon dry and steep it in the soy.
  3. Discard the reduced liquid, mix in fresh boiled soy, add crushed ginger, and store.
  4. Dress with vinegar when serving; the color keeps fresh for several days.
