Cake (Madeira)

Ingredients

• 4 eggs
• 6 oz loaf sugar
• 6 oz flour
• 4 oz butter
• 1 lemon
• 1/2 teaspoonful carbonate of soda

Instructions

1. Whisk 4 eggs until they are as light as possible.
2. Then add by degrees the following ingredients: six ounces of dry pounded loaf sugar; four ounces of butter, dissolved but not heated; the grated rind of one lemon; six ounces of flour.
3. Beat all well together. Great care should be taken that the butter is perfectly mixed, and no appearance of it remains.
4. Just before putting it in the mould, add half a teaspoon of carbonate of soda and the juice of the lemon.
5. Bake for an hour.
