Cucumber (Savoury)

Instructions

  1. Pare a moderate sized cucumber and scoop out the seeds.
  2. Grate one tablespoonful of cheese and mix it with one tablespoonful of bread-crumbs, a little chopped parsley, chives, pepper, salt, and butter.
  3. Stuff the cucumber with this and bake in the oven for half an hour.
  4. Have a sauce made thus: one tablespoonful of cheese, a teaspoonful of flour, a teaspoonful of butter, half a teaspoonful of mustard, and a little pepper and salt. Stir these in a saucepan with a tablespoonful of milk, and stir till thick.
  5. Pour this over the cucumber, cover with bread-crumbs, brown, and serve.
