Cake (Sponge) (Mrs. Van der Byl.)

Instructions

  1. Have these ready: the eggs; their weight in sugar; the flour; the grated rind of a lemon and the juice.
  2. Whisk the whites and yolks separately.
  3. Crush the sugar and whisk it with the whites.
  4. Then add the flour, and lastly the yolks.
  5. Just before putting it in the oven, add the juice of the lemon.
  6. Put into a well-buttered mould, dusted with fine biscuit.
  7. Bake in a moderate oven with a paper over it. This makes a very large cake, or two small ones.
