Donghwa Neureumi (Winter-Melon Neureumi)

Ingredients
- winter melon (donga / white gourd)
- radish
- seogi, pyogo, and jini mushrooms
- black pepper (hucho)
- Sichuan pepper (cheoncho)
- soy broth (jiryeong-guk)
- oil and wheat flour
- pheasant broth (saengchi-jup)
Instructions
- Slice old winter melon thin and wide; salt it.
- Boil radish soft; finely chop seogi, pyogo, and jini mushrooms and season with black pepper for the filling.
- Wrap filling in the melon slices, skewer, and steam over a double-boiler until done.
- Make a soy-broth sauce with oil, wheat flour, pheasant stock, black and Sichuan pepper; boil.
- Plate the pieces and pour the sauce over.
