Sauce (Tomato) (A Very Good Recipe.)

Instructions

  1. First boil 40 lb. of ripe tomatoes until the skins and seeds separate freely.
  2. Strain through a coarse sieve that will retain the seeds and skins.
  3. To this juice add the above ingredients, tied in a muslin bag: cayenne, or 8 red chillies; 1 oz. peeled garlic; 2 lb. loaf sugar; 1 lb. salt; 2 oz. black pepper; 2 oz. cloves; 4 oz. ginger; and 3 quarts of the best vinegar.
  4. Boil all well for an hour or more, till the juice is quite creamy and thick.
  5. Bottle and cork securely, and keep in a cool place.
