Shūrbā (Meat and Rice Soup)

Ingredients

Instructions

  1. Brown medium-cut fatty meat in rendered tail-fat.
  2. Cover with lukewarm water; add salt, peeled chickpeas, cinnamon sticks and dry dill sprigs.
  3. When meat is done, add ground coriander, ginger and pepper; top up with water and boil hard.
  4. Remove the dill, add cleaned washed rice in batches, and cook until the rice is done.
  5. Off the fire, dust with ground cumin and cinnamon, wipe the pot, rest an hour and lift off, keeping the rice loose. Optionally add meatballs.
