A Cream Almond Pudding

Ingredients
- mace
- 1/2 nutmeg
- 1 quart cream
- 8 egg yolks
- 3 egg whites
- 1 spoon flour
- 1/4 pound almonds
- 1 spoon rose-water
- melted butter and sugar
Instructions
- Boil a little mace and half a grated nutmeg gently in a quart of cream, then cool.
- Beat 8 yolks and 3 whites, strain, and mix with 1 spoon flour and 1/4 pound almonds.
- Add 1 spoon rose-water and, by degrees, the cold cream, beating well together.
- Wet and flour a thick cloth, pour in the pudding, and boil hard half an hour.
- Take out and pour over melted butter and sugar.
