A Cream Almond Pudding

Instructions

  1. Boil a little mace and half a grated nutmeg gently in a quart of cream, then cool.
  2. Beat 8 yolks and 3 whites, strain, and mix with 1 spoon flour and 1/4 pound almonds.
  3. Add 1 spoon rose-water and, by degrees, the cold cream, beating well together.
  4. Wet and flour a thick cloth, pour in the pudding, and boil hard half an hour.
  5. Take out and pour over melted butter and sugar.
