Another Plain cake

Ingredients

• 2 quarts milk
• 3 pounds sugar
• 3 pounds shortening
• 1 quart sweet cyder
• 18 eggs
• allspice
• orange
• fennel, carroway or coriander seeds
• 9 pounds flour
• 3 pints emptins

Instructions

1. Warm two quarts of milk, three pounds of sugar and three pounds of shortening hot.
2. Add a quart of sweet cider, which will curdle the mixture.
3. Add eighteen eggs, and allspice and orange to taste, or fennel, carraway or coriander seeds.
4. Put to nine pounds of flour and three pints of emptins.
5. Bake well.
