To pickle Cucumbers

  1. Choose small, fresh, unblemished cucumbers.
  2. Make a salt-and-water pickle strong enough to bear an egg, boil and skim it, then pour it over the cucumbers and stive them down for twenty-four hours.
  3. Strain the cucumbers into a colander and dry them well with a cloth.
  4. Boil up the best white wine vinegar with cloves, diced mace, nutmeg, white peppercorns, long pepper, and races of ginger.
  5. Put in the cucumbers with a few vine leaves and a little salt.
  6. As soon as they begin to turn colour, put them into jars and stive them down close.
  7. When cold, tie on a bladder and leather.
