Char Quá (Chinese Artichokes)

Ingredients

Instructions

  1. Wash the char quás thoroughly in cold water.
  2. Turn them into boiling salted water and boil for about twenty minutes.
  3. Mix one teaspoonful of olive oil with one tablespoonful of Quong Sang Chong (water chestnut flour) until very smooth.
  4. Pour enough boiling water over the mixture to make a thick cream.
  5. Add one teaspoonful of syou and let it just come to a boil.
  6. Stir in the chopped parsley gently.
  7. Arrange the cooked artichokes on a small platter with green lining, or place a green leaf under each artichoke.
  8. Fill the center of each artichoke with the yolks of hard-boiled eggs, whipped smooth with a little olive oil and salt.
  9. Pour the sauce over the artichokes and serve.
