Chestnut Kintons

Ingredients

Instructions

  1. Blanch the chestnuts and place them in lukewarm water.
  2. Boil the chestnuts, changing the water several times, until you can pierce the nuts with a needle.
  3. Strain off the water, then add one pound of sugar and three quarters of a pint of mirin sauce, and boil slowly.
  4. Have ready sweet potatoes which have been peeled and boiled for twenty minutes.
  5. Add vinegar to the sweet potatoes, then strain and press through a sieve.
  6. Gradually mix the potato mixture with the chestnuts.
  7. Slowly boil the combined mixture, stirring constantly, until dry.
  8. Mold into desired shapes and roll in powdered sugar.
