Chestnut Kintons

Ingredients
- 1 quart chestnuts
- 1 pint sweet potatoes
- 1 pound sugar
- 3/4 pint mirin sauce
- 1 tablespoon vinegar
- powdered sugar
Instructions
- Blanch the chestnuts and place them in lukewarm water.
- Boil the chestnuts, changing the water several times, until you can pierce the nuts with a needle.
- Strain off the water, then add one pound of sugar and three quarters of a pint of mirin sauce, and boil slowly.
- Have ready sweet potatoes which have been peeled and boiled for twenty minutes.
- Add vinegar to the sweet potatoes, then strain and press through a sieve.
- Gradually mix the potato mixture with the chestnuts.
- Slowly boil the combined mixture, stirring constantly, until dry.
- Mold into desired shapes and roll in powdered sugar.
