Amai Tamana (Sweet and Sour Cabbage)

Ingredients
- 1 small head hard cabbage
- 1 tablespoon goma oil
- salt
- 1 tablespoon sugar
- 1 tablespoon vinegar
- 1 small piece lemon or orange peel
- 1/2 teaspoon goma seeds
Instructions
- Cut the cabbage very fine.
- Heat one tablespoon of goma oil in a frying pan until boiling hot.
- Throw in the shredded cabbage and sprinkle with salt, stirring constantly to keep it from burning.
- Add one tablespoon of sugar, one tablespoon of vinegar, and a small piece of lemon or orange peel that has been shaved very fine.
- Cover the pan tightly and let all simmer for twenty minutes.
- Add half a teaspoon of goma seeds.
- Serve hot.
