Almond Cakes

Ingredients

Instructions

  1. Mix thoroughly the rice flour, powdered sugar, and blanched chopped almonds with the almond oil.
  2. Moisten the dry mixture with the two beaten eggs, using no water and adding more egg if the dough is too stiff.
  3. Roll the dough about a quarter of an inch thick and cut into fanciful shapes.
  4. Place half an almond in the center of each cake.
  5. Bake in a moderate oven for one hour.
  6. Store the cooled cakes in a tin box for long-term keeping.
