Almond Cakes

Ingredients
- 2 cupfuls rice flour
- 1/4 cupful almond oil
- 1/2 cupful almonds, blanched and chopped very fine
- 1 1/2 cupfuls powdered sugar
- 2 eggs, beaten
- 1/2 almond, blanched
Instructions
- Mix thoroughly the rice flour, powdered sugar, and blanched chopped almonds with the almond oil.
- Moisten the dry mixture with the two beaten eggs, using no water and adding more egg if the dough is too stiff.
- Roll the dough about a quarter of an inch thick and cut into fanciful shapes.
- Place half an almond in the center of each cake.
- Bake in a moderate oven for one hour.
- Store the cooled cakes in a tin box for long-term keeping.
