Plumb Cake

Ingredients
- 1 pound currants
- 1 drachm nutmeg
- 1 drachm mace
- 1 drachm cinnamon
- salt
- 1 pound citron
- candied orange peel
- blanched almonds
- 6 pounds flour
- 21 eggs
- 1 quart new ale yeast
- 0.5 pint wine
- 1.5 pints cream
- raisins
Instructions
- Mix one pound of currants with one drachm each of nutmeg, mace and cinnamon, a little salt, one pound of citron, candied orange peel and blanched almonds, and six pounds of well-dried flour.
- Beat twenty-one eggs.
- Add the beaten eggs with one quart of new ale yeast, half a pint of wine, three half-pints of cream, and as many raisins as needed.
