To dry Peaches

  1. Pare the fairest, ripest peaches into fair water.
  2. Take their weight in double refined sugar; from half make a very thin syrup, a quart of water to a pound of sugar.
  3. Boil the peaches in the syrup until they look clear, then split and stone them.
  4. Boil until very tender, then lay them to drain.
  5. Boil the other half of the sugar almost to a candy, put in the peaches, and let them lie all night.
  6. Lay them on a glass and set in a stove until dry.
  7. If sugared too much, wipe them with a wet cloth a little.
