A rich Cake

Ingredients
- 2 pounds butter
- 5 pounds flour
- 15 eggs
- 1 pint emptins
- 1 pint wine
- 2.5 pounds raisins
- 1 gill brandy
- 1 gill rose-water
- 2.5 pounds loaf sugar
- 1 ounce cinnamon
Instructions
- Rub two pounds of butter into five pounds of flour.
- Add fifteen eggs (not much beaten), one pint of emptins and one pint of wine, and knead up stiff like biscuit dough.
- Cover well, put by, and let rise overnight.
- Soak two and a half pounds of raisins in one gill of brandy overnight, or, if new, for half an hour in the morning.
- Add the raisins with one gill of rose-water, two and a half pounds of loaf sugar and one ounce of cinnamon, and work well.
- Bake as loaf cake, No. 1.
