To preserve Currants

Ingredients
- currants
- 1 pound sugar
- 1/2 pint water
Instructions
- Take the weight of the currants in sugar and pick out the seeds.
- Melt a pound of sugar with half a pint of water.
- Put in the currants and cook very leisurely, skimming them, then take them up.
- Let the syrup boil, then return the currants.
- When they are clear and the syrup thick enough, take them off.
- When cold, put up in glasses.
