To preserve Cherries

Ingredients
- 2 pounds cherries
- 1 1/2 pounds sugar
- 1/2 pint fair water
Instructions
- Combine two pounds of cherries, one and a half pounds of sugar, and half a pint of fair water.
- Melt some of the sugar in the water, then add the rest of the sugar and the cherries.
- Boil softly until all the sugar is melted.
- Boil fast and skim them.
- Take them off two or three times, shake them, and return to the fire to boil fast.
- When they are of a good colour and the syrup will stand, they are done.
