To preserve Cherries

Ingredients

Instructions

  1. Combine two pounds of cherries, one and a half pounds of sugar, and half a pint of fair water.
  2. Melt some of the sugar in the water, then add the rest of the sugar and the cherries.
  3. Boil softly until all the sugar is melted.
  4. Boil fast and skim them.
  5. Take them off two or three times, shake them, and return to the fire to boil fast.
  6. When they are of a good colour and the syrup will stand, they are done.
