For preserving Strawberries

Ingredients
- 2 quarts strawberries
- 1/2 pint water
- 2 pound sugar
- 2 pound strawberries
Instructions
- Squeeze two quarts of strawberries through a cloth for their juice.
- Add half a pint of water and two pounds of sugar, put into a saucepan, and scald and skim it.
- Set the saucepan on a chafing dish and add two pounds of stemmed strawberries, stems up, without bruising them.
- Boil about ten minutes, then take them out gently with a fork into a stone pot.
- When all are done, turn the hot syrup into the pot.
- Set in a cool place for use.
- Currants and cherries may be done the same way, adding a little more sugar.
