For preserving Quinces in Loaf Sugar

Ingredients

Instructions

  1. Put a peck of quinces into a kettle of cold water and hang over the fire.
  2. Boil until soft, then take them out with a fork.
  3. When cold, pare them and quarter or halve them if you like.
  4. Put their weight of loaf sugar into a bell-metal kettle or saucepan with one quart of water.
  5. Scald and skim until very clear.
  6. Put in the quinces and boil in the syrup for half an hour, adding oranges if you like.
  7. Put into stone pots for use.
