To preserve Apricots

Instructions

  1. Pare the apricots and stone what you can whole.
  2. Give them a light boiling in a pint of water, or according to quantity of fruit.
  3. Take the weight of the apricots in sugar; boil that sugar with the cooking liquor until it comes to a syrup.
  4. Give the apricots a light boiling, skimming off scum as it rises; when the syrup jellies, it is enough.
  5. Take up the apricots, cover with the jelly, lay cut paper over them, and lay down when cold.
  6. Alternatively, take plums before they form stones (test with a pin) and coddle in many waters until grass-green.
  7. Peel and coddle again; take their weight in sugar and make a syrup with a pint of water.
  8. Put in the plums, boil slowly until clear, skimming often; put up in glasses for use.
