To boil Asparagus

Instructions

  1. Cut the white ends off about six inches from the head and scrape them clean from the green part downward, throwing them into a pan of clear water as you go.
  2. After a little soaking, tie them into small even bundles.
  3. When the water boils, put them in and boil up quick, avoiding over boiling which loses the heads.
  4. Toast a slice of bread brown on both sides.
  5. When the asparagus is done, take it up carefully.
  6. Dip the toast in the asparagus water and lay it in the bottom of the dish.
  7. Lay the asparagus heads on the toast with the white ends outwards and pour a little melted butter over the heads.
  8. Cut an orange into small pieces and stick them between for garnish.
