To preserve Mulberries whole

Ingredients

Instructions

  1. Set some mulberries over the fire in a skillet or preserving pan and draw off a pint of strained juice.
  2. Wet three pounds of very finely beaten sugar with the pint of juice.
  3. Boil up the sugar and skim it.
  4. Add two pounds of ripe mulberries and let them stand in the syrup until thoroughly warm.
  5. Set on the fire and boil very gently, only half enough.
  6. Put them by in the syrup until the next day, then boil gently again.
  7. When the syrup is pretty thick and stands in round drops when cold, they are done.
  8. Put all into a gallipot for use.
