To preserve Peaches

Ingredients

Instructions

  1. Scald the peaches in boiling water without letting them boil.
  2. Take them out and put them in cold water, then dry in a sieve.
  3. Put them into long, wide-mouthed bottles.
  4. Clarify a quarter pound of sugar for every half dozen peaches and pour it over them.
  5. Fill the bottles with brandy, stop them close, and keep in a close place.
