Orange Pudding

Ingredients
- 16 egg yolks
- 1/2 pound butter
- 2 Seville oranges
- 1/2 pound fine sugar
- 2 spoons orange water
- 2 spoons rose-water
- 1 gill wine
- 1/2 pint cream
- 2 naples biscuit
- rich puff-paste
Instructions
- Combine 16 egg yolks with 1/2 pound melted butter.
- Grate in the rinds of 2 Seville oranges and beat in 1/2 pound fine sugar.
- Add 2 spoons orange water, 2 spoons rose-water, 1 gill wine, 1/2 pint cream and 2 naples biscuit (or fine loaf/roll crumbs soaked in cream).
- Mix all together and put into rich puff-paste, doubled round the edges of the dish.
- Bake like a custard.
