Orange Pudding

Ingredients

Instructions

  1. Combine 16 egg yolks with 1/2 pound melted butter.
  2. Grate in the rinds of 2 Seville oranges and beat in 1/2 pound fine sugar.
  3. Add 2 spoons orange water, 2 spoons rose-water, 1 gill wine, 1/2 pint cream and 2 naples biscuit (or fine loaf/roll crumbs soaked in cream).
  4. Mix all together and put into rich puff-paste, doubled round the edges of the dish.
  5. Bake like a custard.
