To Roast Beef

Ingredients

Instructions
- Build a brisk, hot fire.
- Hang the beef down before the fire rather than spitting it.
- Baste with salt and water while roasting.
- Allow about a quarter of an hour per pound, less for tender beef and more for old tough beef.
- Prick with a fork to test whether it is done, cooking to rare for the best flavor and health.
