To Roast Beef

Instructions

  1. Build a brisk, hot fire.
  2. Hang the beef down before the fire rather than spitting it.
  3. Baste with salt and water while roasting.
  4. Allow about a quarter of an hour per pound, less for tender beef and more for old tough beef.
  5. Prick with a fork to test whether it is done, cooking to rare for the best flavor and health.
