To stuff and roast a Goslin

Ingredients
- goose inwards (giblets)
- grated bread
- 4 ounces butter
- pepper and salt
- sweet herbs
- 2 eggs
- 4 onions
- wine
Instructions
- Boil the goose's giblets until tender and chop them fine.
- Mix in double their quantity of grated bread, 4 ounces butter, pepper, salt, and optional sweet herbs.
- Mould in 2 eggs.
- Parboil 4 onions, chop them into the stuffing, and add wine.
- Fill the bird with the stuffing and roast it.
- Serve any water fowl stuffed this way with onion sauce.
