To stuff and roast a Goslin

Ingredients

Instructions

  1. Boil the goose's giblets until tender and chop them fine.
  2. Mix in double their quantity of grated bread, 4 ounces butter, pepper, salt, and optional sweet herbs.
  3. Mould in 2 eggs.
  4. Parboil 4 onions, chop them into the stuffing, and add wine.
  5. Fill the bird with the stuffing and roast it.
  6. Serve any water fowl stuffed this way with onion sauce.
