To preserve Goosberries, Damsons, or Plumbs

Ingredients

Instructions

  1. Gather the fruit dry, full grown, and not ripe.
  2. Pick them one by one into very clean, dry glass bottles and cork close with new corks.
  3. Set the bottles carefully into a kettle of water, keeping the corks dry and the water up to the necks.
  4. Make a gentle fire until the fruit is a little coddled and turns white.
  5. Leave them until cold, then pitch or wax the corks close and thick.
  6. Store in a cool, dry cellar.
