Asparagus Soup

Ingredients
- 8 pounds gravy beef
- 5 pints water
- sweet herbs
- 1 onion
- pepper
- salt
- 1 bundle asparagus
- parsley
- mint
- bread
- 1 tea-cup spinach essence
Instructions
- Combine eight pounds of gravy beef with five pints of water, a few sweet herbs, a shredded onion, pepper, and salt. Simmer until the strength of the meat is sufficiently extracted. Strain off the soup.
- Add a bundle of asparagus cut small, along with a little chopped parsley and mint. Cook until the asparagus is thoroughly done.
- A few minutes before serving, throw in some fried bread cut into dice-sized pieces.
- Pound spinach to a pulp and squeeze it through a cloth. Stir about a teacup full of this spinach essence into the soup, then let it boil up to prevent a raw taste.
