Asparagus Soup

Instructions

  1. Combine eight pounds of gravy beef with five pints of water, a few sweet herbs, a shredded onion, pepper, and salt. Simmer until the strength of the meat is sufficiently extracted. Strain off the soup.
  2. Add a bundle of asparagus cut small, along with a little chopped parsley and mint. Cook until the asparagus is thoroughly done.
  3. A few minutes before serving, throw in some fried bread cut into dice-sized pieces.
  4. Pound spinach to a pulp and squeeze it through a cloth. Stir about a teacup full of this spinach essence into the soup, then let it boil up to prevent a raw taste.
