A Fine Receipt for a Savoury Omelette

Ingredients
- 4 eggs
- 1.5 ounces butter
- finely minced herbs
- pepper
- salt
Instructions
- Break four eggs and beat them thoroughly until they are thin enough to pass through a hair sieve, then continue beating until perfectly smooth and thin.
- Heat butter in a small omelette frying-pan (about an ounce and a half) until it dissolves, then pour in the beaten egg.
- As soon as the egg rises and becomes firm, slide the omelette onto a warm plate and fold it over. The omelette should only be fried on one side.
- Sprinkle finely minced herbs, pepper, and salt over the unfried side. A salamander may be held over the unfried side to remove any remaining rawness.
