A Fine Vegetable or French Soup

Ingredients
- 2 quarts strong stock made of gravy beef
- carrots
- turnips
- leek
- celery
- broccoli
- peas
- French beans
- a few lumps white sugar
- pepper
- salt
- a few force-meat balls
Instructions
- Begin with two quarts of strong stock made from gravy beef.
- Cut the carrots, turnips, leek, celery, broccoli, peas, and French beans as small as possible, then add them to the stock.
- Add a few lumps of white sugar, and season with pepper and salt.
- Let the soup simmer until the vegetables are perfectly soft.
- Just before serving, throw in a few force-meat balls.
