A Fine Vegetable or French Soup

Ingredients

Instructions

  1. Begin with two quarts of strong stock made from gravy beef.
  2. Cut the carrots, turnips, leek, celery, broccoli, peas, and French beans as small as possible, then add them to the stock.
  3. Add a few lumps of white sugar, and season with pepper and salt.
  4. Let the soup simmer until the vegetables are perfectly soft.
  5. Just before serving, throw in a few force-meat balls.
