A Bola d'Hispaniola

Ingredients
- 1.5 pounds flour
- 3 spoonfuls yeast
- 2 ounces butter
- 1 tablespoon essence of lemon
- 8 eggs
- 0.5 teacup water
- 0.25 pound citron
- 0.75 pound orange and lemon peel
- powdered sugar
- cinnamon
- powdered sweet almonds
Instructions
- Mix together the flour, yeast, fresh butter, essence of lemon, eggs, and water to form a light dough. Set it to rise for about an hour.
- While the dough rises, prepare the filling: mix together the thin-sliced citron, orange peel, and lemon peel with powdered sugar and cinnamon.
- Roll out the risen dough and cut it into three pieces. Form the Bola by layering the pieces of dough with the fruit mixture between each layer.
- Strew powdered sweet almonds and sugar over the top. Bake without using a tin.
