  1. Mix together the flour, yeast, fresh butter, essence of lemon, eggs, and water to form a light dough. Set it to rise for about an hour.
  2. While the dough rises, prepare the filling: mix together the thin-sliced citron, orange peel, and lemon peel with powdered sugar and cinnamon.
  3. Roll out the risen dough and cut it into three pieces. Form the Bola by layering the pieces of dough with the fruit mixture between each layer.
  4. Strew powdered sweet almonds and sugar over the top. Bake without using a tin.
