A Delicate Receipt for Roast Mutton
Origin: London, England
Source: Anonymous, 1846
Ingredients
- 1 mutton joint
- cold water
- flour
- salt
Instructions
- Place the mutton joint in a saucepan and cover it with cold water. Bring to a boil and simmer for half an hour.
- While the meat boils, prepare your spit and fire and have them ready. Remove the mutton from the saucepan and place it immediately before the fire to roast.
- Baste the meat well throughout roasting. Dredge it repeatedly with flour and sprinkle with salt as it cooks. This method of roasting removes the strong flavor that some find disagreeable.
