Instructions

  1. Place the mutton joint in a saucepan and cover it with cold water. Bring to a boil and simmer for half an hour.
  2. While the meat boils, prepare your spit and fire and have them ready. Remove the mutton from the saucepan and place it immediately before the fire to roast.
  3. Baste the meat well throughout roasting. Dredge it repeatedly with flour and sprinkle with salt as it cooks. This method of roasting removes the strong flavor that some find disagreeable.
