A Dutch Fricandelle

Instructions

  1. Remove the skin and bones from the dressed fish and cut it into small pieces. Combine the fish with two or three anchovies and season well. Soak the crumb of a French roll in milk, then beat it together with the fish and three eggs until well mixed.
  2. Butter a mould and sprinkle the inside generously with bread raspings. Pour the fish mixture into the mould and bake until done.
  3. Turn the fricandelle out of the mould. Serve either dry or with anchovy sauce. If serving dry, sprinkle finely grated breadcrumbs thickly over the top and place before the fire for a few minutes to brown.
