To Boil Rice

Instructions

  1. Wash the rice thoroughly in many waters until the water runs clear as drinking water.
  2. Use an iron pot and add one and a quarter cupfuls of cold water to one cupful of rice.
  3. Cover tight and boil slowly for half an hour—no more.
  4. Do not stir the rice at any point during cooking.
  5. Set the pot on the back of the range, covered with a clean cloth or napkin, until ready to serve.
  6. Serve rice in individual bowls, replenishing as soon as each is empty throughout the meal.
  7. Add salt only at the table.
