To Boil Rice

Ingredients
- 1 cupful rice
- 1.25 cupfuls cold water
- salt
Instructions
- Wash the rice thoroughly in many waters until the water runs clear as drinking water.
- Use an iron pot and add one and a quarter cupfuls of cold water to one cupful of rice.
- Cover tight and boil slowly for half an hour—no more.
- Do not stir the rice at any point during cooking.
- Set the pot on the back of the range, covered with a clean cloth or napkin, until ready to serve.
- Serve rice in individual bowls, replenishing as soon as each is empty throughout the meal.
- Add salt only at the table.
