Almond Rice

  1. Boil half a pound of whole rice in milk until soft. Beat the cooked rice through a sieve to break it down. Return the sieved rice to the fire and add sugar to taste, a few pounded sweet almonds, and a few slices of citron. Simmer for a short time, then let it cool. Place the mixture in a mould and allow it to become sufficiently firm. Turn the moulded rice out onto a serving dish, stick it with blanched almonds for decoration, and pour a fine custard over it before serving.
  2. Note: This may also be made without milk, and by increasing the quantity of almonds the result will be found exceedingly good.
