Mutton Stewed with Celery

Ingredients
- mutton
- water
- 1 carrot
- 1 turnip
- salt and pepper
- forcemeat balls
- celery
- 2 egg yolks
- 1 tablespoon flour
- 0.5 lemon
Instructions
- Place the mutton in a stewpan with just enough water to cover it. Add the carrot and turnip, and season lightly. Simmer until nearly done, then remove the meat and strain off the gravy.
- Return both meat and gravy to the stewpan. Add the forcemeat balls and the celery cut into small pieces. Let all stew gently until perfectly done.
- Mix the egg yolks, flour, and lemon juice together with a little of the gravy. Stir this mixture into the stewpan, taking care to prevent curdling.
