Mutton Stewed with Celery

Instructions

  1. Place the mutton in a stewpan with just enough water to cover it. Add the carrot and turnip, and season lightly. Simmer until nearly done, then remove the meat and strain off the gravy.
  2. Return both meat and gravy to the stewpan. Add the forcemeat balls and the celery cut into small pieces. Let all stew gently until perfectly done.
  3. Mix the egg yolks, flour, and lemon juice together with a little of the gravy. Stir this mixture into the stewpan, taking care to prevent curdling.
